Here's a family favorite recipe that we've enjoyed for several years. Enchiladas are one of our very favorite meals and it fits under the "comfort food" category just perfectly. I hope you'll give this recipe a try in your own home!

Simply Delicious Enchiladas
1 pound ground beef or turkey
1/2 cup shredded cheddar cheese (you can also use Mexican or Fiesta blend)
1/4 cup sour cream
1/2 Tbsp. taco seasoning (we make ours homemade)
1/2 tsp. oregano
1/4 tsp. black pepper
2 cans red enchilada sauce
sprinkle of garlic powder
1/4 tsp. salt
1 can refried beans
1 can black olives, sliced
extra cheese, for topping
medium sized flour tortillas
In a medium sized pot, cook the ground beef (or turkey) until browned and fully cooked. Drain off any grease and return to the heat.
Add to the meat: the cheese, sour cream, taco seasoning, oregano, black pepper, garlic powder, salt, and refried beans. Stir to combine everything well. Then pour in 1 and 1/4 cups red enchilada sauce. Save the remaining sauce for the topping.
Lay out one flour tortilla on a cutting board or large place and spoon the filling onto the center. Sprinkle some black olives over the filling. (Usually about 1/3 cup of the filling works perfectly for the medium sized tortillas.) Roll up and place seam side down in a greased 9x13 inch pan. Repeat with the remaining tortillas until your filling is used up.
Once all the enchiladas are in the pan, pour the remaining enchilada sauce over the top. Sprinkle a bit of cheese over the top as well and any remaining black olives.
Bake at 350*F for about 30 minutes, or until bubbly and very hot.
Serve alongside lettuce, tomatoes, and avocado (or guacamole) and a bit of sour cream.

(Note: You can use homemade enchilada sauce as well. I would do this myself, but I just haven't come across a recipe that we like well enough yet.
Also, we always make sure to buy refried beans in the can with the fewest ingredients. The brand we buy is simply cooked beans, water, and salt.)
