So, I am a granola lover. I first found this love several years ago when I tried store-bought granola over vanilla yogurt. From that moment, I was hooked! Since then, I have taken it up a notch by making homemade granola. If I loved the store-bought varieties, well, I really, really love my homemade version.
I have so much fun and find great enjoyment in experimenting with different combinations. This one, in particular, uses a few of my favorite ingredients: honey, almonds, pecans and coconut oil. If a dish has those items, I know it's going to be good!
While this is baking in the oven expect some yummy scents to fill your house and for all who are in your home to gather round the kitchen to see what that smell is. It is divine!
Honey Nut Granola
3 cups oats
3/4 cups chopped almonds
3/4 cups chopped pecans
1/4 cup coconut oil
3/4 cup honey
1/4 cup water
dash of salt
1 1/2 tsp. vanilla
Combine all the ingredients above in a mixing bowl. Spread onto a baking sheet greased with coconut oil and bake at 325*F for 20 minutes. Remove from the oven, stir gently, and bake for another 8-10 minutes. If you like it a little crunchier, simply bake for another few minutes, stirring in between, until it reaches your desired crunchiness.
Allow the granola to cool completely. Then break up and store in an airtight container. Serve however you wish. My favorite way is over vanilla yogurt, and if blueberries are in season, a handful of those plump lovelies sprinkled over top.
(Note: To make this recipe vegan, simply use agave nectar or maple syrup in place of the honey.)
