From My Kitchen ♥ Chicken Fajita Soup


Here we have another homey, cozy soup recipe...in case you haven't noticed, soup is one of my very favorite things to eat. Ever.

My mom loves, and I mean LOVES, Mexican food. We all really like it, but she loves it. And I love soup, a lot. This recipe combines those two things beautifully.

Last October I made this soup for the first time and honestly wasn't expecting it to be that good. I had tried a similar recipe the year before and wasn't that thrilled by it. After eating just one bite of this soup, my whole family declared in unison that this was a new favorite! I had to mark it, and make it again.

There is a slight kick in the flavor, but not enough to blow you away. We don't like things spicy, so it was just right for us. And all the loved components of a chicken fajita are in this dish....

Chicken Fajita Soup

3 tbsp. flour
1 package taco seasoning (I use homemade seasoning.)
4 boneless, skinless chicken breasts, cut into bite-size pieces
3 tbsp. olive oil
1 onion, chopped
1 tsp. minced garlic
15.5 oz. drained corn
15.5 oz. black olives, sliced
14.5 oz. can diced tomatoes
4.5 oz. chopped green chilies
3 cups water
1 cup instant rice, uncooked (brown or white)
1 can nacho-cheese soup
1 1/4 cup water
Any toppings you wish to use.

In a large stockpot, drizzle in the olive oil. Add the chicken pieces and cook until mostly done. Sprinkle in the taco seasoning and flour while the chicken is cooking. Stir to coat the chicken evenly.

Once the chicken is mostly cooked, add in the onions and garlic and continue to cook until the veggies are tender. Stir in the corn, olives, tomatoes, green chilies, rice and 3 cups water. Bring to a boil and cover; let simmer for about 5 minutes. 

Add the canned soup and 1 1/4 cups water and stir to combine and heat until the soup is how all the way through. 

Spoon soup in bowls and top with whatever you desire. Cheese, sour cream, green onions, black olives, tortilla chips or cilantro leaves are just a few ideas to get you started.
