our sweet leap year celebration


Happy March, my lovely readers!

Welcome to a short but sweet little post...
I thought I would share a little peek into our simple, but sweet, celebration of Leap Year.

Obviously Leap Year only happens once every four years, and it's not a grand holiday or really anything special (unless you are one of those people who only get to officially celebrate your birthday every four years). But in our home, we love making these small days on the calendar special and extra sweet.

So that's exactly what we did.

 
You just can't live a Leap Day without watching Leap Year...it's the only proper way to celebrate February 29th. {{winks}}

And it just so happens to be one of our favorite movies. So, of course, we watched that. And we did so whilst we ate a dinner that was inspired by the meal that Declan and Anna cooked at the Bed and Breakfast in Tipperary in the movie. We had a delicious roasted chicken, mashed potatoes and gravy, roasted asparagus, and a salad with our favorite Mary Berry dressing. It was an amazing meal! 

And for dessert, because what's a celebration without something sweet to end things off with...???
I made a new-to-me chocolate cake recipe that I found on an Australian recipe website through some random Instagram scrolling. The odd thing about this cake is that it had no flour of any sort and instead it had a can of kidney beans that you pureed the heck out of in the food processor. It had a smooth chocolatey frosting on top. And I decided to pour a good amount of frozen raspberries in a saucepan and let them cook for probably 20 minutes and let them create the most amazing fruity sauce. Once it cooled nearly all the way, I poured it over the cake and sprinkled sliced almonds around the edges. It was such a pretty cake, if I may say so. And it tasted so good! I made my mom and sister try to guess the "secret ingredient" and it took them awhile before they finally guessed it was kidney beans. You couldn't even tell they were in there! I will say that I do think that without the raspberries on top it would have been way too strong of a flavor for me. But the raspberries were absolute perfection!
