Cozy Comfort Food ♥ Homemade Cheddar Biscuits


On Wednesday I shared the recipe for my family's favorite chicken and kale pot pies. Today I'm sharing the recipe for the cheddar biscuits which grace the tops of these little bowls of comforting bliss. 

Homemade biscuits are so easy to make and whenever I bake up a batch, they're gone in a flash! While we always make this recipe with the pot pie, you could, of course, just make the biscuits as a side to any dish you like. Chili would go splendidly with these cheesy delights...and now I've just given myself an idea. {{winks}}

These biscuits are quick to pull together so there's no need for any boxed mixes or pre-packaged blends...just flour and buttermilk and a few other pantry staples and you've got simply perfect homemade cheddar biscuits.


Homemade Cheddar Biscuits

2 cups flour
1 cup shredded cheddar cheese
1 tsp. salt 
1/2 tsp. baking soda
1 1/2 tsp. baking powder
5 Tbsp. cold, cubed butter
1 cup buttermilk

Combine the flour, cheese, salt, baking soda and powder in a mixing bowl. Simply mix together with your fingers. Using a pastry blender, two knives or your fingers, cut in the cold, cubed butter into the flour mixture. It should end up being very crumbly.

Pour in the buttermilk and gently give it a stir with a spoon. Do not overmix...the dough will be sticky and lumpy. That's what you want!

Drop by a 1/3 cupful onto a greased sheet tray and bake at 400*F for about 10 minutes. 

At this point, they will be about two-thirds of the way cooked, but you'll want to remove them from the oven and place one biscuit on top of each individual pot pie. Continue to bake for about 12-14 minutes or so, until the pot pie is bubbly.

If you are just making the biscuits alone, you'll want to bake these for a total of probably 15-20 minutes, until the bottoms are nicely golden brown.
