A cheery March day to you, lovely readers!
Continuing on with my St. Paddy's Day tea party recipes, today I've got a super simple one to share. This one isn't an Irish recipe, but it is green. So that counts, right? And it's so tasty! Truly the perfect teatime savoury or even a great appetizer for any other occasion at that.
Combining sweet peas with the tanginess of green olives and the sweetness of pickle relish, along with a lemony dressing makes for one heck of a flavor bomb! The flavors of springtime, if you ask me! And anything with a phyllo crust is a winner in my book {{smiles}}
Springtime Pea Salad in Phyllo Cups
2 cups frozen sweet baby peas
2 Tbsp. mayo
2 Tbsp. minced celery
2 Tbsp. finely diced pimento-stuffed green olives
1 Tbsp. sweet pickle relish
1 tsp. lemon juice
1/2 tsp. salt
1/8 tsp. pepper
2 boxes frozen mini phyllo cups, thawed
Place peas in a colander. Run very hot water over peas for one minute to defrost. Drain well.
In a medium bowl, combine peas, mayo, celery, olives, relish, lemon juice, salt and pepper. Toss to combine, making sure to stir well. Cover and refrigerate until needed, up to one day.
(This is the perfect mixture to make the day before!)
Just before serving, evenly divide pea salad among the phyllo cups.
Serve as part of your beautiful springtime afternoon tea...
